A lot of ingredients-everything is in this recipe, but well worth the trouble! Ingredients:
3/4 cup margarine |
1/2 cup crisco shortening |
1 cup white sugar |
1 cup packed brown sugar |
1 cup peanut butter |
2 teaspoons vanilla |
2 eggs |
1/2 cup applesauce |
1/2 tablespoon maple extract |
1 cup all-purpose wheat flour |
1 1/2 cups all-purpose flour |
2 teaspoons baking soda |
2 teaspoons baking powder |
1 teaspoon salt |
2 teaspoons nutmeg |
2 teaspoons allspice |
1 tablespoon ground cinnamon |
1 cup soft raisins |
3 cups oatmeal |
1 cup post grape-nuts cereal, crushed |
1/2 cup crushed pecans (optional) or 1/2 cup walnuts (optional) |
Directions:
1. Preheat oven to 350°. 2. Cream together butter, shortening, sugars; add eggs, vanilla and maple extract. 3. To the creamy mixture add peanut butter and applesauce; set aside. 4. Next sift flours & spices together and gradually add to the creamy mixture. 5. Last add the oatmeal, cereal, raisins and nuts; mix well. 6. Refrigerate cookie dough for 1 hour. 7. Drop cookie dough by tablespoonfuls onto an ungreased cookie sheet and bake for 8-10 minutes or until done, depending on your oven. |
