My brother-in-law makes this every weekend... His 'boys' and their friends want him to open a 'Taco Stand' LOL I am addicted to this... Ingredients:
1 pkg. chorizo |
1-2 med. potatoes (cut into bite-sized pieces) |
1 tbsp oil |
10 eggs |
1/2 c.milk |
1 tsp. cumin |
1 tsp. adoba (garlic kind) |
10 soft or corn tortillas |
*optional* chopped hot peppers or your choice of salsa... i put cilantro in mine |
Directions:
1. In large skillet, fry chorizo and potato;s till a little brown (use 1tbsp oil) 2. add seasonings to the egg mixture ( 1/2 c. milk eggs) 3. whisk and pour into hot pan 4. stir until eggs are set. 5. Meanwhile warm your tortillas on stovetop or micro your preference 6. I use hot sauce mixed with sour cream 7. 1/2. cup salsa or hot sauce 8. 1/2 c. sour cream 9. pour a little on your taco 10. Enjoy! 11. the above makes 1 cup of 'sauce':) |
