Ingredients:
1 1/2 lbs potatoes |
1 cup butter |
1 tablespoon fresh parsley, chopped for garnish |
1 1/2 lbs small red potatoes, skin on |
1 lemon, zest of |
butter, to taste |
pepper, to taste |
salt, to taste |
Directions:
1. Parmentier Potatoes:. 2. Peel and cut the potatoes into small pieces, about 1cm (1/2 in) square. 3. Cook in melted butter. 4. Sprinkle with the chopped parsley as garnish. 5. Boiled New Potatoes:. 6. Boil potatoes in enough water to cover for approximately 10-minutes. 7. Before serving, add lemon zest, butter, salt and pepper to taste. |
