Nothing says summer like juicy watermelon. For a unique take on this Fourth of July staple, cube watermelon and toss with feta, onions, pine nuts, and fresh herbs.
Ingredients:
7 cups cubed seeded watermelon
1 cup crumbled feta cheese
1/2 red onion, thinly sliced
1/2 cup arugula
1/3 cup pine nuts, toasted
1/3 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Combine watermelon, feta cheese, red onion, arugula, pine nuts, parsley, and mint in a large mixing bowl.
2. Whisk olive oil, lemon juice, salt, and pepper together in a small bowl; drizzle over salad and toss to coat.
