From The Grecian Plate cookbook. Mmm cheese! Use this Pastry Dough recipe in this recipe. Ingredients:
3 tablespoons butter |
3 tablespoons flour |
1 1/2 cups milk, warm |
3/4 teaspoon salt (less if the feta is very salty) |
1/4 teaspoon pepper |
2 cups feta, crumbled |
8 ounces cottage cheese, small curd |
4 ounces cream cheese, softened |
6 eggs, beaten |
pastry dough (see recipe link) |
olive, sliced (optional) |
Directions:
1. Melt butter in heavy saucepan. 2. Blend in flour, stirring constantly for 2 minutes to form a paste. 3. Add milk with salt and pepper; stir constantly until sauce thickens. 4. Remove from heat. 5. In a large bowl, combine cheeses with eggs; pour into cream sauce and mix well. Set aside. 6. Remove prepared dough from refrigerator; allow to come to room temperature. 7. Press into bottom of 13 X 9 -inch baking pan. 8. Bake shell at 450°F for 10 minutes. 9. Remove from oven; pour filling over crust. 10. Bake at 350°F for 30-35 minutes. 11. Let stand 15 minutes before cutting into squares. 12. Garnish with olives. 13. Serve warm. |
