Another recipe from The Ultimate Chocolate Cookbook from Family Circle 1997... Ingredients:
1 envelope unflavored gelatin |
1/4 cup cold water |
1 prepared marble or chocolate pound cake (14 oz) |
3 tablespoons coffee liqueur |
16 ounces cream cheese |
1 container ricotta cheese (15 oz) |
1 1/2 cups confectioners sugar |
3 tablespoons unsweetened cocoa powder |
1 cup mini chocolate pieces |
unsweetened cocoa powder for dusting |
Directions:
1. Soften gelatin in water in heat proof dish, 3 minutes; place dish in skillet of simmering water; stir gelatin to dissolve. 2. Slice cake into scant 1/2 inch think slices. 3. Fit slices in bottom of a 13 x 9 x 2 inch paking pan in single layer, cutting and adding scraps to fit snugly. 4. Drizzle liqueur over cake. 5. Process cream cheese, ricotta, sugar and cocoa in food processor 6. until smooth. 7. Add gelatin mixture, processing to blend. 8. Add chocolate pieces, process just to combine. 9. Scrape into prepared pan, spreading over cake. 10. Cover with plastic wrap and chill for 3 hours or until set. 11. Dust with cocoa; cut into squares. 12. 15 squares |
