Classic tirimasu, light, creamy and with a kick. Ingredients:
8 ounces mascarpone cream cheese |
1 ounce caster sugar |
3 medium eggs |
5 fluid ounces strong black coffee or 5 fluid ounces espresso |
2 1/2 fluid ounces coffee liqueur (e.g. tia maria or kahlua) |
20 sponge cake fingers (1 packet) |
cocoa, to sprinkle |
Directions:
1. Whisk egg whites, placing yolks in a separate glass for later. 2. Empty egg whites into small bowl. 3. Blend cheese, sugar and egg yolks for a minute or until well mixed. 4. Fold egg whites back into cheese mixture. 5. Make up coffee and liquer into shallow bowl. 6. Dip each biscuit briefly into coffee/liquer mixture and make 2 layers in large bowl. 7. Layer 1/3 cheese mixture over first layer of biscuit. 8. Dip remaining biscuits and place over layer of cheese. 9. Top off with remaining cheese mixture. 10. Sprinkle cocoa with sieve just before serving. 11. Use within 1 day (raw egg) but that shouldn't be a problem! |
