A rich but yummy dessert. Ingredients:
36 ladyfingers |
9 ounces mascarpone cheese |
2 egg yolks |
2 egg whites |
4 tablespoons white sugar |
3 tablespoons rum |
4 tablespoons milk |
1 cup strong brewed coffee |
1/8 teaspoon unsweetened cocoa powder |
Directions:
1. Mix together the milk, coffee, rum and sugar. Soak lady fingers in the coffee mixture. Layer 1/2 of the soaked ladyfingers in the bottom of a 9x13 inch pan. 2. Beat together egg yolks and 2 tablespoons sugar. Add the mascarpone cheese and 1 tablespoon of rum; mix well. 3. Whip egg whites until stiff peaks form; fold into mascarpone cheese mixture. Spread 1/2 of mixture over soaked lady fingers. Cover with second half of soaked lady fingers and cover evenly with remaining mascarpone cheese mixture. Sprinkle with cocoa powder. Refrigerate at least 3 hours. |
