if you are worried about the alcohol - it cooks off but maybe you should not serve it to small children. it is a rich winter dish certain to make you feel warm. Ingredients:
lentils (about 4 cups, depending on how much you need) |
1 litre of medium dry red wine |
1/2 pound cubed belly of pork (cured, smoked) |
2 onions |
1 litre (approx.)vegetable stock |
bay leaves |
cloves |
cayenne pepper |
salt |
2 carrots, cubed |
4 small potatoes, cubed |
250 ml cream (should be about 2 cups) |
powdered sugar or sugar cubes (confectioner’s sugar ) |
Directions:
1. Soak lentils over night in red wine. 2. Fry cubes belly of pork, 3. onions until onions light brown, 4. sprinkle with confectioner’s sugar, 5. let caramelize. 6. Add lentils with wine and stock 7. Add all spices 8. Simmer for 15 minutes 9. Add cubed carrots and 10. Cubed potatoes 11. Simmer until lentils and vegetables are done. 12. Add cream 13. Now season to taste 14. Instead of confectioner’s sugar at the beginning you can take 4 sugar cubes and use your kitchen ‘soldering gun’ to caramelize the cubes, then put them into soup. I find the way with the confectioner’s sugar easier and it tastes just as good. |
