Tippys Pineapple Upside-down Cake |

An old favorite that everyone loves! The aroma while baking is marvelous. I made it one day when catering a film shoot and had to bring it every day for the rest of the shoot (7 days)! Ingredients:
1/4 cup butter or margarine |
3/4 cup brown sugar, packed |
1 can (14-16 oz) pineapple rings (drained. save syrup). |
4 glace cherries, sliced in half |
2 eggs |
3/4 cup granulated sugar |
1 tsp vanilla essence or flavoring |
1 cup sifted all-purpose flour |
1tsp baking soda |
1/4 tsp salt |
1/2 cup reserved syrup from pineapple rings |
Directions:
1. Preheat oven to 350F/170/C/Gas Mark4 2. Put 1/4 cup butter in a large round cake pan. 3. Place pan in oven to melt butter. 4. Remove pan when butter is melted and sprinkle brown sugar evenly on to melted butter. 5. Place 1 pineapple ring in the center of the pan on the brown sugar and the rest around the centerring. 6. Place 1/2 glace cherry in the center of each pineapple ring, sliced flat side up. 7. Place pan back in oven while mixing the following: 8. Beat EGGS, SUGAR and VANILLA in mixing bowl. 9. Fold in SIFTED FLOUR, BAKING POWDER, SALT. 10. Stir in 1/2 cup RESERVED PINEAPPLE SYRUP. 11. Remove pan from oven and pour batter slowly over pineapple rings. 12. Bake about 40 minutes or until toothpick comes out clean. 13. Have a large plate or round platter ready. 14. Let the cake set a few minutes. 15. Place the plate or round platter on the top of the cake pan and flip over quickly (wear your oven gloves!!!). 16. Serve warm or cold. |
