Tiny Pita Breads For Parties |

This is my favorite little bread to serve with meatballs in sweet/sour sauce. One meatball fits nicely in a pita half and it's just about a mouthful. Halve the breads to create 32 halves and enough bread to house a bag of frozen meatballs. Ingredients:
1 packet yeast |
1 cup warm water |
3 cups flour |
1 teaspoon salt |
1/4 cup oil (i use olive oil) |
you can add herbs and garlic, if you like. sometimes i just leave them plain and let the filling do the talking. |
Directions:
1. Dissolve the yeast in the warm water. 2. Add the flour, salt and oil. Also add any herbs and/or garlic, if you're using any. 3. Knead the dough for 10 minutes, or until it's smooth and elastic. 4. Set it aside, covered, and let it rise for 1 1/2 hours. 5. Punch the dough down. 6. Let it rest for 10 minutes. 7. Cut it into 16 parts. 8. Roll each part into a ball between your hands. 9. Using a rolling pin, flatten and roll out each ball to a 2-inch circle. 10. Lay the circles on a greased baking sheet. 11. Let it rise again, covered, for 30 minutes. 12. Bake at 500-degrees F, or at the highest heat setting on your oven, for 8 minutes. Watch them carefully because ovens differ and some will cook faster than others. They should be a little puffy and slightly golden. 13. Let the bread cool. 14. Halve them right away if you plan to use them in halfs. 15. TIP: while the bread is still slightly warm, place each pita in an open sandwich bag to keep it moist and pliable. 16. TIP: if you have a problem opening up the pocket , put each one in the microwave for no more than 20 seconds and then open them. 17. Always serve pita at room temperature. |
