A yummy soup for your tummy. You could use it as a meal if you need some good stuff and no calories, that's how I designed it, needed some more nutrition and not too many calories. I love it!!! Soup is great!! Ingredients:
1 liter chicken broth, low fat |
3 cups spinach, fresh |
6 baby carrots, chopped |
1/2 small onion, chopped |
1 celery stalk, chopped |
9 stewed tomatoes, chopped |
1/3 cup macaroni, dry |
2 large eggs |
1 salt, to taste |
1 pepper, to taste |
1 vinegar, to taste |
1 dill weed, to taste |
Directions:
1. pour chicken broth in sauce pan 2. add a splash of vinegar to taste 3. chop carrots, onion and celery stalk, add to broth 4. chop stewed tomatoes, add to broth 5. add 3 cups fresh spinach 6. add 1/3 cup dry macaroni, I used Tubettini 7. add dill week to taste, optional 8. bring to a boil and cook slowly until pasta is cooked 9. whip 2 eggs and add to soup, cook 5 minutes longer 10. salt and pepper to taste |
