I used pinto beans in place of refried beans and tortilla chips in place of taco salad shells. Delicious and simple and the dressing is my favorite! Recipe courtesy of Old El Paso, Makin' it Easy, Makin' it Fun! Ingredients:
1 cup sour cream |
1/2 cup salsa |
1 lb ground beef |
1 1/4 ounces taco seasoning mix |
16 ounces refried beans |
4 1/2 ounces green chilies, chopped |
1 large tomato, diced (or cherry tomato wedges) |
1/2 cup red onion, chopped |
4 ounces monterey jack cheese, cut into cubes |
8 taco salad shells, heated |
Directions:
1. For dressing, in small bowl, combine sour cream and salsa and set aside. 2. In medium skillet, prepare ground beef according to taco seasoning envelope directions. 3. Layer lettuce, beef mixture, refried beans, green chilies, tomato, onion, cheese, and dressing in heated taco salad shells. |
