I found this recipe on Timberdoodle's blog. They have the best home school curriculum I've tried and, apparently, like delicious things too! I use whipped cream instead of the Cool Whip. From their blog, A delicious, robustly raspberry dessert with a layer of cream cheese, a delicious nutty crust, and topped with Cool Whip; this dessert is a favorite with our family, coworkers, and even the local fire department! Ingredients:
2 cups flour |
1 cup butter |
1 cup finely chopped pecans |
8 ounces cream cheese |
1 cup cool whip |
1 cup powdered sugar |
1 (6 ounce) package raspberry jell-o gelatin |
2 cups boiling water |
24 ounces frozen raspberries |

Directions:
1. Preheat oven to 300 degrees. 2. Cut butter into flour and add nuts. 3. Pat into a 9” x 13” pan. 4. Bake 10 – 20 minutes or until edges are golden brown. 5. Set aside to cool. 6. Mix cream cheese, 1 cup cool whip, and powdered sugar. 7. Spread on cooled crust. 8. Put in refrigerator and let set up. 9. Mix Jell-O and water. 10. Add frozen berries. 11. Pour over cream mixture and refrigerate until set. 12. Frost with with Cool Whip and keep refrigerated until served! |
