This is a delicious recipe given to me by my good friend Tilly. The cake is dark and spicy - very appropriate for Christmas or other winter celebrations. Ingredients:
2 cups flour |
2 tablespoons cocoa powder |
3/4 teaspoon salt |
1 1/2 teaspoons cinnamon |
1/2 teaspoon ground cloves |
1/2 teaspoon nutmeg |
1/2 teaspoon allspice |
1/2 teaspoon baking soda |
1 1/2 teaspoons baking powder |
1 cup raisins (or chopped dates) |
1 1/2 cups sugar |
1/2 cup shortening |
2 eggs |
1 1/2 cups applesauce (or apple pie filling) |
Directions:
1. Grease and flour a 8x8 baking pan. Set aside. Preheat oven to 350°F. 2. In a medium bowl, combine all dry ingredients. Add the raisins (or dates) and stir to coat well. Set aside. 3. Cream shortening and sugar for 2 minutes. Add eggs one at a time. Beat well. 4. In small portions, alternately add the flour-raisin mix and applesauce. Begin and end with flour. 5. Pour the mixture into the prepared pan. Bake at 350 for 40 minutes or until a cake tester inserted in center comes out clean. 6. Cool completely on a wire rack. Sift powdered sugar over the cake just before serving. |
