Super easy and diet friendly, these saved me from food boredom on my low-carb, low-fat, low- calorie diet! They also happen to be fabulous. Ingredients:
24 ounces tilapia fillets |
1/2 cup shredded cheddar cheese or 1/2 cup shredded mexican cheese |
1 (1 ounce) packet taco seasoning |
4 tortillas |
4 tablespoons smashed avocados or 4 tablespoons packaged guacamole |
4 tablespoons salsa |
shredded lettuce (optional) or cabbage (optional) |
Directions:
1. Set oven to broil (high). 2. Empty taco seasoning into a bowl. 3. Dredge fish in seasoning on both sides. 4. Broil fish 11 minutes, turning once. 5. Heat 4 tortillas in the microwave under a moist paper towel. 6. Place 1 fish fillet in each tortilla. 7. Top each with 1/8 cup shredded cheese, 1 Tbs. avocado, 1 Tbs. salsa, and lettuce. 8. Wrap and enjoy! |
