Tia's Elegant Wild Rice Soup |

I found this recipe years ago in a newspaper and altered it quite a bit for our family's taste. Hope you enjoy it as much as my DD!!! Ingredients:
6 tablespoons butter |
1 onion, chopped |
1/2 cup flour |
4 cups chicken broth, heated in microwave |
1/3 cup finely grated carrot |
3 tablespoons chopped slivered almonds |
1 teaspoon minced garlic |
1 dash hot sauce |
white pepper |
1 (8 ounce) carton fresh mushrooms, sliced (can use 1/2 button and 1/2 portabella) |
1 cup cooked wild rice (if we have left-over white i mix them together) |
1 cup half-and-half |
1/3 cup diced cooked ham (optional) |
chives (optional) or parsley (to garnish) (optional) |
Directions:
1. Melt butter in saucepan; saute onion and garlic until tender. Blend in flour; gradually add broth. 2. Cook, stirring constantly, until mixture comes to a boil; boil 1 minute. 3. Stir in all ingredients and ham if using except half-and-half. Simmer 5 - 15 minutes. 4. Blend in half-and-half; heat to serving temperature. Garnish with parsely or chives. |
