A non spicy variation of the Latin-American salsa. Ingredients:
8 ounces red onions |
4 ounces red bell peppers |
4 ounces green bell peppers |
12 ounces fresh tomatoes |
4 ounces fresh cilantro |
4 ounces fresh chives |
3 ounces lemon juice |
3 ounces canola oil |
2 ounces water |
1/4 ounce ground cumin |
1/8 ounce salt |
1/8 ounce pepper |
Directions:
1. Peel, seed and chop the tomatoes. 2. Chop the onion and pepper. 3. Finely mince the cilantro and chives. 4. Put a 12-in saucepan in medium. Add the oil, sauté the onion and the peppers. When soft, add the tomato, reduce to low. 5. Add the water, cumin, salt, pepper, and lemon. Turn off. 6. Add the cilantro and chives. 7. Taste and correct. |
