Thyme Smoked Chicken Breasts |

Ingredients:
6 chicken breast halves, skin intact |
1/2 bunch fresh thyme, tough stems removed |
salt and pepper to taste |
olive oil for coating chicken |
Directions:
1. Loosen skin on each chicken breast on one side and tuck a few sprigs of thyme underneath. Season with salt and pepper and rub chicken breasts with oil. Arrange chicken pieces on rack one inch apart, skin-side up, to allow for smoke circulation. Smoke on medium heat for 10 minutes per half pound. Remove from smoker, garnish with fresh thyme and serve. |
