These potatoes are a healthy alternative to fried and have an incredible taste, a bit crispy on the outside and super tender inside. You can also use the same ingredients for a mixture of root vegetables such as sweet potatoes, carrots and parsnips. Read more . Ingredients:
10 medium white potatoes, washed and quartered
1 tbls kosher salt
1 tsp pepper
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tbls thyme, dried or fresh
olive oil
Directions:
1. Preheat oven to 375 degrees, line a baking sheet with foil. Place potatoes on sheet cut side up. Sprinkle on rest of the ingredients except the olive oil. Now take the olive oil and drizzle it over the potatoes so that each one gets a little splash. Place in oven for about 45 minutes or until potatoes are fork tender. If roasting other vegetables such as carrots with them, the carrots should be flipped about halfway through so they will carmelize on both sides.
