Thyme roasted new potatoes is an easy winter recipe that also doubles up as great party food when served with cool, creamy dip. If you can't find thyme, fresh rosemary tastes just as good. Ingredients:
2 lbs baby new potatoes |
3 tablespoons fresh thyme, chopped |
6 tablespoons olive oil |
Directions:
1. Preheat the oven to 400°F 2. Put the new potatoes in a roasting tin with the thyme and season well with salt and freshly ground black pepper. 3. Drizzle over the olive oil and roast for 45 to 50 minutes until golden brown and cooked through. |
