Thyme Pork With Apple-Cherry Compote |

Ingredients:
2 cups diced peeled gala apple (about 2) |
1 tablespoon fresh lemon juice |
1 teaspoon chopped fresh thyme |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
4 (4-ounce) boneless center-cut pork loin chops (about 1/2 inch thick) |
cooking spray |
1/2 cup dry white wine |
1/3 cup dried cherries |
3 tablespoons brown sugar |
1/8 teaspoon salt |
1/8 teaspoon ground allspice |
1/8 teaspoon ground cinnamon |
1 tablespoon light butter |
Directions:
1. Toss apple with lemon juice; set aside. 2. Combine thyme, salt, and pepper. Sprinkle over pork. Coat a large nonstick skillet with cooking spray, and place over medium heat. Add pork, and cook 3 minutes on each side or until done. Remove pork from pan; keep warm. 3. Add wine to pan; simmer 1 minute. Add apple, cherries, and next 4 ingredients. Cover and cook 6 minutes over low heat. Uncover and cook 1 to 2 minutes or until mixture is thick. Stir in butter. Serve over pork. |
