Thyme and Ginger Brownies

Ingredients:
360 g dark chocolate
250 g butter, unsalted
4 eggs
295 g brown sugar
65 g glace ginger, chopped
1 1/4 teaspoons thyme, dried
75 g flour
1 teaspoon baking powder
1/4 teaspoon salt
100 g dark chocolate
30 g butter, unsalted
40 ml cream
Directions:
1. Line a 22cm square pan. Heat oven to 160°C.
2. Melt butter and half the chocolate, set aside to cool.
3. Whisk eggs and sugar until thick and pale. Add melted chocolate mixture, finely chopped chocolate, ginger and thyme.
4. Sift flour and baking powder and salt. Gently fold through the chocolate mix.
5. Spoon cake mixture into the lined pan and bake for 1 hour and 10 minutes or until firm on top.
6. Cool in pan.
7. For the chocolate glaze, melt chocolate, butter and cream.
8. Cool slightly until a spreadable consistency, then spread over the cake.
9. Cut into squares.
