Thyme And Blue Cheese Squash |

This is an incredible recipe I got from a great friend who is a fantastic cook and entertainer. Greatness and oh so easy. Ingredients:
2 acorn squash |
1 teaspoon granulated sugar |
2 tablespoons dark brown sugar |
1/2 teaspoon freshly grated nutmeg |
1/2 teaspoon salt |
1 tablespoon fresh chopped thyme |
4 tablespoons crumbled blue cheese |
4 tablespoons unsalted butter melted |
Directions:
1. Split squash lengthwise then scoop out seeds and place cut side up in shallow baking pan. 2. Add 1/4 water then sprinkle each half with sugars, nutmeg and salt then drizzle with butter. 3. Sprinkle herbs over squash then wrap tightly in foil and bake at 350 for 1 hour. 4. Remove from foil and sprinkle blue cheese over them then cook under broiler 2 minutes. |
