Although they take a little bit of work, these are a relatively simple but festive looking treat and are great for those occasions when you need what my mother and grandmother referred to as dainties .
Ingredients:
3 cups flour
1 1/4 cups sifted icing sugar
1 1/4 cup softened butter
2 teaspoons vanilla
1 egg
1 cup raspberry jam
2 squares chocolate
Directions:
1. Combine the flour, icing sugar, butter, vanilla and egg and mix on low until the dough forms a ball.
2. Grease a jelly roll pan and press the dough into it, flattening it to fill the pan.
3. Using a sharp knife, mark into squares (9 x 6) and use your thumb to create a thumbprint hollow in the center of each square.
4. Fill the prints with a teaspoon of jam in each.
5. Bake for 15-20 minutes at 400 F (or until light golden).
6. Remove from the oven and cut into squares with a sharp knife while still warm, using the lines marked before baking.
7. Cool completely.
8. Melt the two squares of chocolate and drizzle over the squares.
