This simple soup is a great way to use up those little handfuls of ingredients you didn't know what to do with. The ham doesn't have to be honey-roasted and the shrimp size doesn't matter except you may want to slice them in half lengthwise if they are large. Ingredients:
26 ounces chicken stock (low salt if available) |
1/2 cup boneless skinless chicken, sliced thin |
1/2 cup honey-roasted ham, sliced thin |
1/2 cup fresh uncooked shrimp (shelled and deveined) |
Directions:
1. In a medium size pot, bring soup stock to a rolling boil. 2. Add chicken, ham, and shrimp. 3. Bring back to a boil; then simmer for 1 minute. 4. Do not overboil. |
