THREE VINEGAR VINE RIPENED TOMATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Byrd Estate in Cedar Hill, Texas in 1993. Ingredients:
1 large ripe tomato |
8 ounces blue cheese |
1 teaspoon fresh basil leaves |
three vinegar vinaigrette |
1/3 cup sherry vinegar |
1/3 cup balsamic vinegar |
1/3 cup red wine vinegar |
1 tablespoon dijon mustard |
1 tablespoon sugar |
1 tablespoon chopped shallots |
1/2 tablespoon garlic |
1 tablespoon chopped fresh parsley |
1 tablespoon chopped sage |
1 tablespoon chopped thyme |
2 cups olive oil |
Directions:
1. Mix all dressing ingredients together then slice tomato into 4 slices. 2. Arrange each slice on a plate and drizzle with the vinaigrette. 3. Crumble 2 ounces of the blue cheese into each serving and garnish with fresh basil leaves. |
