Toss some cabbage with bell peppers, chopped jalapeño, green onion, and a homemade vinegar-based dressing for a crunchy, spicy slaw. Ingredients:
1/2 cup thinly sliced red bell pepper strips |
1/2 cup thinly sliced green bell pepper strips |
1/4 cup finely chopped seeded jalapeño pepper |
1/3 cup chopped green onions |
1 (10-ounce) package angel hair coleslaw (about 6 cups) |
1/4 cup white wine vinegar |
2 tablespoons fresh lime juice |
1 teaspoon sugar |
2 teaspoons canola oil |
1/2 teaspoon salt |
1/4 teaspoon white pepper |
Directions:
1. Place first 5 ingredients in a large bowl, tossing to combine. 2. Combine vinegar and remaining ingredients in a small bowl, stirring with a whisk. Pour vinegar mixture over cabbage mixture, tossing to coat. |
