Three Onion Potato Casserole |

This is really good. Ingredients:
grated potatoes |
butter or oil |
1 can cream of chicken or celery soup, undiluted |
1 lg bunch green onions, chopped |
1/4 cup chopped onions |
2 cups sour cream |
1/2 cup milk |
1-2 cups cheddar or jack cheese (or combination of) |
1 sm can french fried onions, for topping |
Directions:
1. Soak potatoes at least 1/2 hour, then saute in butter or oil until cooked 3/4th of the way through, set aside. 2. Mix all ingredients, except for the fried onions. Put into a deep casserole dish. Top with fried onions. Bake 1 hour until golden on top. Can be made a couple of days ahead of time, except do not bake ahead of time. Can also be frozen. |
