I use to make this many years ago when I could eat wheat..I hope you find it as good as I remember. The recipe come from the Tassajara Bread Book. Ingredients:
1 cup corn meal ( course ground or stone ground works best) |
1/2 cup whole wheat flour |
1/2 cup unbleached white flour |
2 teasp. baking powder |
1/2 teasp. salt |
1 egg |
1/4--1/2 cup honey |
1/4 cup oil |
3 cups milk or buttermilk |
Directions:
1. combine dry ingredients. 2. combine wet ingredients 3. mix together 4. the mixture will be quite watery 5. pour into a greased 9'' x 9'' pan 6. bake 50 min at 350' or until the top is springy 7. one batter makes 3 layers. the corn meal settles to the bottom. the bran rises to the top, and in the middle you will have a custardy layer. 8. sometimes I would add the extra honey and serve fresh strawberries on top. |
