THREE CHEESE QUESADILLAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Morgan Estate in Austin, Texas in 1982. Ingredients:
1 cup shredded cheddar cheese |
1 cup shredded monterey jack cheese |
1 cup mozzarella cheese |
1 teaspoon mexican spice |
1/4 teaspoon crushed red pepper |
3 green onions sliced |
1 jalapeno pepper diced |
4 burrito size tortillas |
sour cream |
salsa |
Directions:
1. Combine cheeses then set aside then combine Mexican spice and crushed red pepper. 2. Rub a frying pan lightly with oil then heat one tortilla turning after 1 minute. 3. Cover half of the tortilla with 1/4 cheese mix, 1/4 seasoning, 1/4 jalapeno and 1/4 onions. 4. Fold in half then cook over low heat until tortilla starts to become crisp. 5. Turn and cook other side then remove from pan and cut into 4 wedges. 6. Serve with salsa and sour cream. |
