Very tasty and easy alternative to stuffed shells or laborious lasagna. Quite high in calories though. Lots of alternatives to make it lower calories without compromising taste. Ingredients:
1 lb. ground beef |
2 cups water |
12 oz tomato paste |
1 1/2 tsp dried oregano |
15 oz ricotta cheese |
8 oz mozzarella cheese |
1/2 cup parmesan cheese |
1 egg |
12 oz pasta |
Directions:
1. In a large skillet, cook beef & onion over medium heat until the meat is no longer pink; drain. Stir in the water, tomato paste, bouillon and oregano. Cover & simmer for 3 minutes. 2. Cook pasta according to package directions to al dente. 3. Meanwhile, in a large bowl, combine the ricotta cheese, 1 cup mozzarella. Parmesan cheese and egg. Add cooked pasta & mix being careful not to tear pasta. 4. Pour pasta & cheese mixture into a 9 1/2 x 14 casserole baking dish. Spoon meat sauce over shells. Cover and bake at 350◦ for 30 minutes. Uncover and sprinkle remaining mozzarella cheese. Bake 3-5 minutes longer until the cheese is melted. 5. Serve immediately with crusty bread. 6. Yield 6-8 servings 7. Family Rating: ★★★★★ |
