This recipe from Slow Cooker Recipes for All Occasions is a good starting point for a great pot of chili. You may, as I did, substitute ground chicken for the turkey, and add whatever other seasonings you like - I myself added some garlic, cumin and oregano, which took this dish up an extra level.
Ingredients:
1 lb ground turkey
1 onion, chopped
28 ounces diced tomatoes, undrained
15 ounces chickpeas, rinsed and drained
15 ounces red kidney beans, rinsed and drained
15 ounces black beans, rinsed and drained
8 ounces tomato sauce
4 ounces mild green chilies, chopped
2 tablespoons chili powder
Directions:
1. Cook and stir the turkey and onion in a medium skillet over medium-high heat until the turkey is no longer pink.
2. Drain and discard the fat.
3. Transfer to the slow cooker.
4. Add the remaining ingredients and mix well.
5. Cover and cook on high for 6 to 8 hours or until done.
