Ingredients:
2 tbsp lemon juice
1 tsp lemon rind
1/2 cup sliced celery
1/2 cup sliced scallions
6 oz chunk light tuna in water
16 oz navy beans
16 oz pinto beans
16 oz great northern beans
2 tbsp extra virgin olive oil
Directions:
1. From lemon, grate 1 teaspoon peel and squeeze 2 tablespoons juice
2. thinly slice 2 green onions and 3 stalks of celery
3. In a large bowl, stir together lemon peel and juice, oil, celery, green onions, 1/4 tsp salt and 1/8 tsp coarsely ground black pepper
4. Stir in canned beans until coated, then gently stir in tuna
5. Serve mixture over shredded lettuce or in lettuce cups
