This is a delicious taco recipe without meat. It's very flavorful, and you don't even miss the meat. When you want something quick and you don't have any meat, this is wonderful. Ingredients:
1 teaspoon olive oil |
1 cup diced onion |
1/2 cup diced red bell pepper |
1/2 cup diced green bell pepper |
1 tablespoon chili powder |
2 teaspoons dried oregano |
1 teaspoon ground cumin |
1 garlic clove, minced |
1 cup garbanzo beans, rinsed and drained |
1/2 cup black beans, rinsed and drained |
1/2 cup pinto beans, rinsed and drained |
8 ounces tomato sauce |
12 taco shells |
3/4 cup shredded iceberg lettuce |
3/4 cup diced tomato |
1/2 cup sharp cheddar cheese, shredded |
1/2 cup salsa |
Directions:
1. Heat oil in a large skillet over medium-high heat until hot. 2. Add onion, bell peppers, chili powder, oregano, cumin, and garlic and saute for 2 minutes. 3. Add garbanzo beans, black beans, pinto beans, and tomato sauce. 4. Bring to a boil and reduce heat. 5. Simmer for 20 minutes or until thick. 6. Heat taco shells and spoon 1/4 cup of the bean mixture into each taco shell. 7. Top with toppings. |
