This is a very refreshing and mild and herby soup Ingredients:
1/3 cup olive oil |
2 leeks ,chopped |
2 stalks celery, chopped |
2 cloves garlic, minced |
4 cups chicken broth |
1 tsp. thyme |
1 tsp. marjoram |
1 bay leaf |
pepper to taste |
1 1/2 cups of canned kidney beans, rinsed . |
1 1/2 cups of canned romano beans, rinsed. |
1 lb. string beans, cut in 1 inch pcs.. |
grated parmesan cheese |
Directions:
1. Heat oil 2. saute leeks celery and garlic 3 - 4 mins.. 3. add rest of ingfedients except string beans and cheese 4. bring the soup to a boil, lower heat and simmer for 20 min. 5. add the string beans and simmer for 20 min until they are cooked 6. serve with grated cheese |
