Three Bean Salad With Gouda |

Found this in the newspaper and made it that evening. Very simple and very good! I didn't have fresh green beans so i used canned and rinsed them well. Tasted wonderful! Ingredients:
2 tablespoons agave nectar or 2 tablespoons honey |
1 tablespoon dijon mustard |
1 tablespoon red wine vinegar |
1 tablespoon virgin olive oil |
1/2 teaspoon fine sea salt |
1/4 teaspoon ground black pepper |
1 (15 ounce) can black beans, rinsed and drained |
1 (15 ounce) can kidney beans, rinsed and drained |
1 1/2 cups green beans, steamed and cooled (about 6oz raw) |
1 large tomato, seeded and diced |
1 cup gouda cheese, diced |
1/2 red onion, diced |
Directions:
1. In a large bowl, whisk together agave nectar (or honey), mustard, vinegar, oil, salt and pepper. 2. Add black beans, green beans, kidney beans, tomato, Gouda cheese. and onions and toss. 3. Refrigerate and allow flavors to blend for at least 30 minutes and up to 1 day. 4. Taste just before serving. 5. Add salt, pepper or vinegar a little at a time if the flavor needs perking up. |
