healthy Ingredients:
3 cups green beans |
1 can chickpea drained and rinsed |
1 kidney beans drained and rinsed |
2 green onions, thinly sliced |
1/4 cup chopped fresh parsley |
1tbsp minced jalapeno peppers |
dressing |
3 tbsp olive oil |
3 tbsp wine vinegar |
1 clove garlic, minced |
1 tsp dried oregano |
1/4 tsp each salt and pepper |
Directions:
1. in a large bowl, whisk together oil, vinegar, garlic, oregano, salt and pepper, set aside 2. in a pot of boiling water, cover and cook green beans until tender- crisp 5 mins drain and add to vinaigrette |
