Low Calorie, Low Sodium, High Protein, High Fiber Ingredients:
1 1/2 cups black beans, dry |
1 1/4 cups chick peas/garbanzo beans, dry |
1 5/8 cups small red beans, dry |
- (each measurement is about 1/2 package of each of the beans) |
1/2 cup red wine vinegar |
1/4 cup rice vinegar |
1/4 cup balsamic vinegar |
Directions:
1. Prepare beans according to package directions. 2. Put beans in a large bowl. 3. Add red wine vinegar, balsamic vinegar and rice vinegar. 4. Mix well. 5. Refrigerate. Beans are high in protein and fiber. Using dry beans rather than canned reduces sodium. Serve as a side dish or eat as a light snack! |
