Using different types of onions, as well as green peppers, is a slight twist to the bean salad you may remember. My family loves this recipe! Ingredients:
1/2 c. oil (canola or vegetable) |
1/2 c. sugar (fructose for diabetics) |
1/2 c. vinegar (cider or white) |
1 tsp. salt |
15-oz. can of green beans (regular, string, or half of each), drained |
15-oz. can of yellow wax beans, drained |
15-oz. can of kidney beans (light, dark, or half of each), drained |
1/4 c. chopped yellow onions |
1/4 c. chopped white onions |
1 chopped shallot |
1/2 c. chopped green bell pepper |
Directions:
1. Combine the first four ingredients until well-blended. 2. Add the rest of the ingredients and stir until combined well. 3. Refrigerate until ready to serve. 4. ***This tastes better if allowed to marinate overnight. |
