Ingredients:
2 teaspoons vegetable oil |
1 1/2 cups chopped onion |
1 cup chopped green pepper |
1 cup chopped sweet red pepper |
2 cloves garlic, minced |
3/4 cup low-sodium ketchup |
1/2 cup firmly packed brown sugar |
1/4 cup molasses |
1 tablespoon cider vinegar |
1 teaspoon dry mustard |
1 (16-ounce) can great northern beans, drained |
1 (16-ounce) can no-salt-added kidney beans, drained |
1 (16-ounce) can lima beans, drained |
vegetable cooking spray |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. Add onion, peppers, and garlic; saute 5 minutes or until tender. Stir in ketchup and next 4 ingredients; bring to a boil. Stir in beans. 2. Pour mixture into an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray. Bake, uncovered, at 325° for 55 minutes or until bubbly. |
