Black-Eyed Peas Ingredients:
1 lb dried black-eyed peas, rinsed |
3 quarts cold water |
1 cup yellow onion, diced |
1 garlic clove, minced |
1 green bell pepper, diced |
1 teaspoon black pepper |
salt |
thinly sliced onion (to garnish) |
8 slices bacon (optional) |
Directions:
1. CLEAN, RINSE, and soak peas at least 30 minutes in cold water. Drain and place all ingredients except salt into 4-quart pot. Heat to a boil, then reduce heat and simmer until tender, about 90 minutes. Add additional water as necessary. Add salt to taste and garnish with sliced onion. Add 8 slices of cooked bacon, cut into 1-inch pieces. Put the bacon into the pot 5 minutes before the peas are done cooking. Makes 12 servings. |
