Got this from my Mother-In-Law who hates to cook. I LOVE it! Ingredients:
1 cup cornmeal |
3/4 teaspoon salt |
3 teaspoons sugar |
4 cups evaporated milk |
2 eggs (beaten) |
Directions:
1. Mix together the cornmeal, salt and sugar. 2. Heat milk in a double boiler. 3. Whisk in mix to blend. 4. Cook slowly, whisking very often, until thickened. 5. Heat oven 400. 6. Remove pot from heat. Whisk in eggs quickly. 7. Pour into a sprayed baking dish. 8. Bake 30 minutes. 9. YUM! |
