Easy way to satisfy you're craving for Girl Scout Thin Mint cookies while still remaining Gluten-Free. I used Glutino brand crackers (original flavor): /content/view/80/114/ although you're free to experiment with other brands and flavors of crackers. Ingredients:
6 ounces milk chocolate |
1 teaspoon mint extract (or more to taste) |
20 gluten-free crackers |
Directions:
1. Microwave chocolate until melted. Mix until no lumps remain. 2. Add mint extract and stir thoroughly. 3. Dip crackers one at a time in chocolate-mint mixture, making sure to cover both sides completely. (I used tweezers so as to not cover my hands in chocolate). 4. Place chocolate dipped crackers on wax paper to harden. 6oz chocolate may make more cookies than 20. 5. Chill to speed up hardening. |
