Thin and Crispy Oatmeal Cookies |

Makes 30 cookies if you use a #40 scoop or 24 if you use a #30 scoop. Cooks Illustrated recipe Ingredients:
1 c unbleached all-purpose flour |
3/4 t baking powder |
1/2 t salt |
1/2 t baking soda |
14 t (1.75 sticks) butter, softened and cool, about 65 degrees |
1 c sugar |
1/4 c brown sugar, packed, light brown |
1 egg |
1 t vanilla extract |
2 1/2 c oatmeal, old-fashioned rolled oats (not instant or quick) |
Directions:
1. Heat over to 350 2. Bake 13 to 16 minutes 3. Line cookie sheet with parchment paper 4. Whisk flour, soda, salt and baking powder 5. Beat butter and sugars until light and fluffy 6. Add egg and vanilla 7. Add flour mixture 8. add oatmeal 9. Scoop eight onto cookie sheet and press to 0.75 inches 10. Bake one sheet at a time 11. Cool cookies on sheet. |
