I am trying to master candied sweet potatoes forever. I have a casserole I think everyone uses. I can never get my candied version thick and gooey. FINALLY, I found one after MANY MANY years and many try's. I hope this works out for you as it did for me. Read more . Maybe it was just a good day when I made these. They are very candied and thickly coated. Good luck. Ingredients:
3/4 cup light brown sugar, packed |
1/2 cup corn syrup |
1/4 cup butter |
6 pared, cooked sweet potatoes (or 1 one pound can) |
heavy skillet |
Directions:
1. Combine sugar, butter, syrup boil and reduce heat. 2. Add potatoes and keep basting cook covered on low heat only turning one time,after 15 minutes. 3. Then remove cover keep basting with cover off for at least another 15 mintes 4. I have only used fresh potatoes. I think the can would make it to juicy and would not get so thick. I suggest you cook or bake the potatoes and forget using can. |
