This is a rich and buttery banana cake - perfect for using up overripe bananas! Ingredients:
115 g butter |
110 g brown sugar |
2 eggs |
4 bananas, over ripe is best |
200 g self raising flour |
65 g milk |
1 teaspoon vanilla extract |
1 teaspoon baking soda |
Directions:
1. Grease an 8 inch round baking pan. 2. Insert the butterfly whisk. 3. Cream the butter and sugar 1 minute/speed 4. Scrape down as necessary. 4. Add eggs and bananas. Mix 10 sec/speed 4. Scrape down. 5. Add flour, milk, vanilla and baking soda.Mix 20 seconds/speed 3. Scrape down. 6. Spoon mixture into the prepared pan. Bake for 50 minutes at 350, or until a knife inserted in the center of the cake comes out clean. |
