This recipe came from a Glamour magazine over 25 years ago. It freezes well, easy to make and everyone loves it! Ingredients:
2 lbs ground beef (can substitute ground turkey) |
1 small green pepper, chopped |
1 (28 ounce) can tomatoes |
1 (4 ounce) can chopped green chilies |
3 medium onions, chopped |
2 garlic cloves |
1 (6 ounce) can tomato paste |
3 tablespoons chili powder |
2 teaspoons salt |
2 teaspoons cumin |
2 (15 ounce) cans red kidney beans, drained |
Directions:
1. In large saucepan over medium heat, cook ground beef with onions, green pepper and garlic until beef is brown and juices evaporate. Add tomatoes and their liquid, tomato paste and remaining ingredients except beans. Heat to boiling. Reduce heat to low, cover and simmer 1-1/2 hours, stirring occasionally. Add beans, heat through. |
