The Versatile Butter Cream |

This is the only butter cream recipe one needs. Flavorings such as liqueurs, flavorings or cocoa may be added at the end. Ingredients:
1/2 pound unsalted butter cut into small pieces, softened |
3 large egg yolks |
1/2 cup sugar |
1/4 cup water |
flavoring of choice. up to 3 tablespoons of liqueur |
Directions:
1. Place egg yolks into the bowl of an electric mixer attached with a whip 2. In a SMALL saucepan combine sugar and water and bring to a boil, stirring with a heat proof spatula to get any sugar crystals from the sides 3. Boil for 3 minutes 4. With the motor running quickly pour the sugar syrup into the yolks 5. Beat until the yolks have cooled to touch 6. With the motor still running start adding bits of butter until all is Incorporated 7. Add flavoring of your choice, raspberry, coffee, halenut liquer etc, or some extract. I add 1/4 cup unsweetened cocoa powder to make a delicate chocolate. 8. I have made this substituting Splenda for sugar for a diabetic friend and it worked great! |
