This is a delicious blend of nuts seeds and cereals. This cereal is an ideal breakfast and a soul satisfying snack. This recipe was adapted from the original version by John Jacksaon of Royal Malewane luxury safari lodge They would serve it after the early morning game drive. Makes 1kg
Ingredients:
120 g butter
150 ml oil
350 ml honey
80 ml maple syrup
50 ml vanilla extract
120 g rolled oats
200 g bran flakes
200 g corn flakes
80 ml wheat germ
50 ml sunflower seeds
50 ml pumpkin seeds
50 ml desiccated coconut
40 ml pecan nuts
40 ml walnuts
40 ml cashew nuts
40 ml sliced almonds
40 ml mixed dried berries
Directions:
1. Preheat oven to 150 degrees celcius.
2. Mix the butter, oil, honey, maple syrup and vanilla extract in a large pot and bring to a boil over low heat until all the ingredients have dissolved.
3. Pour the mixture over the dry ingredients and stir well. Bake in the oven, tossing every few minutes until the syrup has been absorbed and the dry ingredients have crisped about 30 minutes.
4. Remove the mixture from the oven and allow to cool completely. Stir it REGULARLY during this time to avoid the muesli from clumping or setting in a solid slab.
5. Serve as desired with milk or yoghurt and store in a airtight container for upto a month.
